Farm-Direct Experimental Processing Box
This year, we're focusing on our relationships in Ethiopia and the experimental processes we've implemented at the farm. It contains three alternative processes from three different villages:
- Dry-ferment washed: Processed coffee from Bombe village is a unique, profound experiment. The coffee is pulped and fermented with no water then rinsed thoroughly using very little water. Like other washed coffees, the mucilage is completely removed before going to the beds for drying. The different fermentation in this process brought new levels of clarity and structure.
- Semi-anaerobic natural: Before going to a covered bed for drying, these Shanta Wene cherries are stored in closed bags for a day to speed up fermentation. It is a controlled process from start to finish, which results in a clean, fruit-forward cup.
- Heavy mucilage honey: Honey-processed coffee pulped by hand from Keramo village. This slow-pulping process ensures maximum mucilage left on the coffee during drying, which results in a complex fruit character in the cup.
