The Sidama region is known for its high-quality coffees due to the optimal growing conditions in that region that allow for a slower ripening process. Once received and sorted, this coffee was processed naturally by laying the cherries out to dry on raised beds for anywhere from 8-25 days, constantly being rotated throughout this period.
