Coffee cherries are picked at peak ripeness. The cherries are washed and a 36-hour oxidation process follows underneath tarps. A subsequent floating follows to reduce temperature. Then, cherries are depulped and an anaerobic fermentation takes place for 60 hours in plastic bags. Finally, a thermal shock is done to finish the fermentation process. The cherries are then taken to raised beds to finish drying.
