The naturally processed Topázio was left to dry on patios with the seed left in the whole cherry and developed delectable dessert notes such as chocolate pie, peanut brittle, and hazelnut, finishing with a creamy and smooth mouthfeel. This is complimented with acidic notes of lime and a crisp black tea body.

Flavor Notes

Chapadão Farm, named for the area where it is located, is owned by Sebastião Curimbaba and sits on a plateau at high altitudes in the region of Fortazela de Minas, or South of Minas. This area favors mechanized picking due to their ability to move around the land easily and is optimal for patio drying with consistent sunlight and temperature throughout the day.
