Meet the farmer

Mbilima sits at 1,800–2,100 meters above sea level and works with roughly 2,000 smallholder farmers. For this natural lot, carefully selected Red Bourbon cherries are hand-sorted and dried slowly on raised African beds for 22–45 days. Cherries are turned frequently and covered during peak sun or rain to ensure even drying and prevent over-fermentation.
